Highly Rated Vietnamese Pastry Pop-Up 'Banh by Lauren' Opens Brick & Mortar Location Tomorrow in Two Bridges
A long awaited addition to the neighborhood opens up tomorrow on 42 Market Street, just east of the Manhattan Bridge.
Banh by Lauren was launched as a pop-up soon after founder Lauren Tran was furloughed during the pandemic from Gramercy Tavern, where she worked as a pastry cook.
Their 'banh boxes', consisting of a range of foods "made with wheat flower/rice flower" have proved extremely popular in NYC. They have hosted many pastry pick-ups in the neighborhood, including at the late Market Line, as well as partnered with local businesses, such as with Chinatown's Yu & Me Books and East Village's Nudibranch.
In October 2023, Lauren and her husband Garland Wong (Brooklyn native) announced they had signed a lease. A couple days later, they announced the launch of a Kickstarter, which smashed expectations. As of today, they've collected over $110k with more than 1,000 backers, much higher than the $85k they first set as a goal.

Before becoming Banh by Lauren, it seems the space was clothing shop and before that, a printing shop called C&S printing.
